Who needs to be religious to eat pancakes!

Pancake Day… probably the best day in the eating calendar.

A bit of history for you… it is also known as the last day of “fat eating” and “gorging”. Well according to Wikipedia anyway and who doesn’t trust wikipedia! In Britain we used to take half of a day off just to eat pancakes! The story goes that a lady in Buckinghamshire in 1445 was so busy making pancakes that she only realised the time when the church bells rang at 11am and so rushed to church tossing her pancake as she went so that it would not burn! This semi also “bank holiday” might not exist anymore but that is no reason to not eat pancakes, and who needs to be religious to do so! Therefore, to celebrate the last day of “fat eating”, we thought we would give you the best pancake idea you will ever have (other than smothering them in chocolate). This one involves using our cordial!

All you need is (makes 6 fluffy pancakes):

135g plain flour

130ml milk

2tbsp melted butter

1 large egg

1tsp baking powder

1/2 tsp salt

Raspberry and Rosemary Cordial

Blackberry and Lavender Cordial

  • In a bowl sift the flour and mix in the sugar, baking powder and salt. In another bowl, whisk the milk egg and butter together and then stir into the flour. Eventually all lumps will go!
  • Pour half the mixture into another mixing bowl. In one bowl add to the mixture a good splash of Raspberry and Rosemary Cordial and stir. In the other mixture add a good splash of Blackberry and Lavender and stir.
  • Once this is done, heat up a non-stick frying pan with a bit of butter. When hot spoon in the mixture, pancake at a time. Cook each side until golden brown.
  • Serve with a drizzle of honey and some fresh raspberries and blackberries. If you want you can drizzle some of the cordial on top too!
